Romantic super...

This was a great evening. For some time we decided to eat some fresh fish, buying it from the local store. Each evening trying a new one, different fish.

So as you see in the picture I made different stuff. First is the fish. In some previous recipe I described how I fry it - with no egg or flour. Just putting some spices and greens.
Simply boiled the rice adding just salt. I didn't want to complicate it too much.
And a salad - the salad is made of the main ingredient the Chinese cabbage, some red thing smelling of crab, corn and mayonnaise.
We had a bottle of wine in the fridge - it was "Buchet Moldavii" (Moldavia Buchet) something like Martini tastes. It was a great evening.

Macaronis, chicken, mushrooms, salad - super

Hey this is grate. This is what my boyfriend loves best. In this food there are present all the desired elements: his favorite macaronis, mushrooms, salad and meat.

This is all just simple. First of all the meat. This is chicken - I boil it and than fry. If you fry it from the beginning you waste a lot of time. It is more efficient to boil it until it is almost ready. Than simple fry it with spices.

The mushrooms it is better to boil them first and than also fry. I added onions and tomatoes. So this is a mushroom sous.

Macaronis are made also easily. No special souses I used. Just hard macaronis boiled.

The first picture represents mushed potatoes, fried fish with some amazing spices and salad.
Mushed potatoes I think is not very difficult to make. The fish was fried with no egg or flour. I just salted it, added pepper and some greens so it got the color. The salad is made of tomatoes, yellow sweet bulgarian pepper, onion, cucumbers and mayonnaise.

This one contains my favorite eggplants. If you make them in a proper way this can be the most tasteful things in the world.
First of all you have to cut the eggplants and put them into water for abut 10 min. Than fry them adding salt and garlic. Very tasty in the end. There are many recipes with eggplants, I love them.
You can also see in the picture some potatoes. These potatoes were made in the oven. All I did is cut the potatoes and put them in the oven in a covered tan. Typical spices like pepper.
Instead of salad it was just cucumbers. Very tasty and no need of meat.

This one is more difficult I think. More than that I invented the recipe myself :)
This is rice with vegetables: corn and eggplants again.
You have to prepare it separately. Boil the rice and fry the eggplants with some onions so that it still keeps its form. Than add the rice on the tan with the eggplants and mix adding spices and the add the corn at the end.
Instead of salad you can see some pickled cucumbers.

Coltunasi - Dumplings

Coltunasi are traditional food in Moldova. At least I suppose so. And not "russian pelmeni" with meat, but coltunasi - dumplings with potatoes.
They can be also with cheese, with potatoes and mushrooms, with cherry.
I prefer those dumplings with cheese and potatoes.
Here is how they look like when they are ready. I like to eat the dumplings adding cream. They are pretty caloric thats why you shouldn't eat them too often.

Meat Balls, Pirjoale

Meat balls are very famous in this region. They can be any size, like big or small, but they have different names. They can be also from different meat, like beef, pork, chicken or even fish. And they can be fried or boiled.
The following recipe of meat balls is an independent recipe and doesn't need a sous, like for small meat balls.

The ingredients are:
Minced meat
1 egg
onions
150 gr of bread
spices
garlic (maybe)

Method of preparing: if you are on a diet you can use chicken meat, and don't fry them on oil. But i used beef as you see in the picture. You have to prepare everything< cut the onions, put the bread in some water and put everything in a bowl as you see in the picture.

Than mix everything, and make these meat balls into such forms like you see in the picture.
Put them on the pan, and fry until they are ready.

Plov, Pilaf

This is not a traditional Moldavian Cuisine for sure. It comes from Uzbekistan if i'm not wrong. Plov is very tasty and healthy. Even if it is very spread and a lot of people cook it everyday, it has a special technology of cooking. And only good cookers can make a real Plov.

The ingredients are:
Meat, traditionally it is pork or beef, I use chicken sometime
rice
onions
carrots
spices

Method of preparing:
Firstly fry the meat, until it is almost ready. As you see in the first picture, after you fried the meat, add the onions and carrots.

Than add the rice. I chose the Chinese prolonged rice as you can see in the picture. The secret is that you add the rice, which has to cover the meat with 1 cm, and that add some water, which will cover the rice up to 2 cm. And cover it, and don't mix until it gets ready.

Ribs

Check out how I once cooked the beef ribs. This was a spontaneous decision. We just saw some nice ribs in the market and decided to prepare them. I never did anything like that before. In the end I liked the result. I didn't search for a a certain recipe, as usual cooked as my intuition told me.
These are the ribs that we bought . There is enough meet on them, the main goal is to make the meet be very soft and easy to eat.

In fact that was so hard to cook, I just fried them for some time, and when it was almost ready I added the tomato paste, and I was rolling the ribs in it.ribs
I also added some spices, you have to pay attention to the color that I obtained. I actually was not expecting to obtain such a sous and color. Here s what i got in the end, very delicious ribs.ribs

Mushrooms sous with pasta

Probably mushrooms with pasta are not typical for Moldova, I'm sure of that, this is a typical food for Italy. But I like to cook it. healthy pasta is always good.

It's a pity I forgot how these mushrooms are called. I just bought them in the shop. I like their taste. I heard one thing about mushrooms, and I don't know if that is true. i heard that after cutting the mushrooms, taking out of the ground you have to eat them in 12 hours, otherwise they become toxic. i don't know if that is true. I still love them.

So the sous is very simple to make, because it has a few ingredients, not much.
Mushrooms, onions and cream.



The preparing of the sous is easy. You have to cut the mushrooms, but not into too small pieces, and fry them on the pan, for 5-7 minutes. They should become smaller and obtain a brown color.


Than add the onions and fry them all together, adding spices. After 6 minutes, you may add some cream, just a little and wait for 3 minutes more.



In order to make the sous more thick you may add some flour. I put a spoon of flour and added some water in the cup and mixed very well than add into the sous. That will be enough to make it more thick.


Boil the pasta, don't forget about it :)

Meatballs with sous

Unlike cutlets, meatballs from meat, fish or vegetable stuffing, taken in the coating of flour (wheat or rice), not bread crumbs. After their fried or simmer in the sauce. For the sauce is most often take the meat broth, tomatoes, onions, add to taste sour Than take the meatballs out, and grill the onions and carrots for couple of minutes.or add berries, such as prunes. Meatballs get tastier if they produce not just a homogenous stuffing, such as beef, but with the addition of grains - mostly rice, slices vegetables (tomatoes, potatoes, cabbage), nuts, dried fruits, etc. These additives attach great makes mincemeat hence cooked and meat balls faster than cutlets. Preparation streets in sauce, or simply supply of ready-cooked separately with cities sauce - another difference from the streets cutlets and snapshots. Tradition cook meat balls (kyufte) in the sauce comes from the kitchens nomadic peoples.
This is a very tasty sous and as usual it doesn't need to many ingredients. The meatballs are probably more russian food or maybe even ukrainian. I'm note sure, but people here in Moldova also eat meatballs.
My method of preparing of meatballs:
Firstly I grill them just a little, in order to keep the round form, because in water they may fall into small pieces and it won't be good. Just like in the first picture.

Than take the meatballs out, and grill the onions and carrots for couple of minutes. Add the meatball and spices just like you see it in the picture.
Than add some water and tomato paste. It will be very delicious. You should obtain something like what you seen in the picture :)

Chicken sous

I love chicken because it you don't need a lot of time to cook it. It can be ready in 30 min. And another advantage is that the level of fat is lower than in pork for example, so it is healthier. That is why the 60% of what I cook are made of chicken.
here is another recipe of a chicken sous with cream, not with tomatoes.
The ingredients are:
500 gr of chicken meat
onions
carrots
cream
spices

Method of preparing:
Chop everything and fry firstly put the chicken on the pan. Than after 15 min, you can put the carrots and keep them for 3 min. After it add the onions and spices just like it is in the picture.


So in 5 min onions and carrots are ready, and you just have to add some water. After 10 min add the cream and in 2 min it is ready.

Another type of lunch!

I have shown some examples of lunch which I have prepared, this is another one.
These are two pieces of chicken fillet with marinated green tomatoes, some macaroni's, and souses.
Method of preparing:
Take these two pieces of chicken, add some spices, then put them into an egg and then into flour. Then just fry them. After chicken becomes like the one from the picture.

An example of lunch!



This is a chicken with macaroni and green peas. I've also added some ketchup and mayonnaise.

Another example of lunch may serve the following picture. That is puree of potatoes, an egg with sausage made in the microwave oven, and a cabbage salad(of you want i can describe the recipe of it, very tasty and healthy.)

Rotatui)) Ratatui


This was a lot of fun, when I didn't know what else to cook, and I saw a package with frozen vegetables and it was written on the Rotatui. I never cooked that before, but it was perfect and very delicious. In fact I have changed the original recipe; The original one is only from vegetables and paste from tomatoes.
The ingredients:
Chicken meat
Onions
Vegetables
spices - garlic, salt, curry

The Method of Preparing:
Fry the meat, and than add the onions. Fry everything until it will obtain a nice brown color, add curry spice. And than add the vegetables.
In order to complete this wonderful stuff I've added some paste from tomatoes and other spice. And made some potatoes in the oven.

Cirnaciori with vegetables

As I mentioned in my earlier posts, cirnaciori, mititei and other stuff are Moldavian traditional food. People used to make them for a long time. And they are very very delicious. That's why I like to cook them, because there is now need these days to make them by yourself. You can by the in the market.
The super was consisting of cirnaciori, potatoes and vegetables.

The vegetables as you can see, are frozen. You can buy them in every market. All you have to do is to boil them for 10 min. Which I did for the first time in my life.

The Cirnaciori are also frozen, i cooked them in the microwave oven for 12 min. There is a red stuff on them, which surprised my, never seen something like that. They are probably using something additionally in order to make them look more attractive.
In the end this is what I got. That's a very colorful picture. You can see some broccoli there. But in Moldova we don't have this American tradition to eat broccoli. And we don't raise it.

Recently done

How mush does a kg of the highest quality pork costs in you country? Here in Moldova it is about 80 lei (less than 8$).
What you can see in the picture is what I recently made for super. This is a a slice of pork, fried in egg and flour, with a lot of spices which I like. Also a piece of omelet and paste of tomatoes. It was very delicious, especially when add the Soy Sous. Even though not very healthy :)

Sausages on potatoes

These days I was really tired, and didn't have enough time to cook something normal.
But it is good when you have some ready products, which can be bought in the super market.
The sausage you see in the picture, is a traditional moldavian sausage. Our grandparents were making these stuff at home. And what is good to mention that these sausages can be very different, like bloody, fatter, bigger, different meat.

























These are different types of sausages. But the next one is the one I bought in the super market. It's a beef one made off.
I just cut the potatoes, put the sausage on them. And put it in the oven for 30 min. It was really great.

Felul 2 - Potatoes with chicken hearts and mushrooms, in the oven

This is my own recipe of potatoes with chicken hearts and mushrooms, made in the oven. But although it is made from traditional ingredients that are used in Moldova. It took me about 40 min. But in the end, it became very tasty and gentle taste. So here it is...

The ingredients are:
8 huge potatoes
1kg of chicken hearts
300 gr of mushrooms
1 onion
spices
mayonnaise

The method of preparing:
Cut the potatoes as it is shown in the pictures and put the in the pan. Than add some spices. The second level should be of chicken hearts, there is no need to chop them. Just put them the way they are. Than cover it with onions.
Another slice should be of mushrooms, follow the pictures. Also add spices.
And again cover it with potatoes. The last step is the mayonnaise.
What is important that there is no need to add any water in it. The hearts will eliminate their own sous and that will be enough. Put it in the oven for 30-40 min.

Chicken in cheese sous


This is all about chicken and cheese.
Method of preparing:
Take some chicken and cut into pieces. Prepare a sous in the following way:
flour, cream, spices, and a lot of cheese. Mix everything very good. Each piece of chicken put into this sous and than on a plate. Put it into the microwave oven, or simple oven. For 30 min or 40 min. It depends on the capacity of the oven.

Meat Loaf

This recipe is my own. But anyway it was inspired by the national traditions of preparing and combining different foods. The meat loaf is a hard to make one. It takes a lot of time and involves many ingredients.
My own meat loaf was made in the following way.

The ingredients are:
beef heart
cabbage
onions
tomatoes
cheese
dough

The method of preparing:
Prepare the dough and all the other elements separably.
The heart, or any other meat, and boil it until it's ready. Cut it into small pieces and put apart.
The cabbage should be fried with onions until it will also be ready for eating. Normally add some spices into it.
When everything is ready, you have to try to put it all together.
The dough, rolled on the table. Put some paste of tomatoes on it, just like on a pizza. Then put the cabbage and the meat, over it put some cheese, tomatoes, spices. And enroll it with the dough. You can put also another level of ingredients if you are making a huge meat loaf. It depends.

Put it in the oven for 25 min. Enjoy!
